The token-swap demo's Cosmos sidechain container was failing to start with the error:
/entrypoint.sh: line 6: ignite: command not foundThis is because the specified version does not exist in the Ignite CLI releases and the installation script is failing silently. This change just updates the Dockerfile to use a valid Ignite CLI version
v28.11.2, which is the latest stable release in the v28.x series.
